Pink Lemonade Icebox Pie

I love a lemon dessert more than just about anything, and this one is so cool and refreshing and decadent that it’s become my go-to recipe for social events when I don’t have a lot of time to spend in the kitchen. One year at our Barbecue, a friend brought along a new friend for me to meet, and as soon as I tasted the pie she brought I knew we must be kindred spirits. Almost everyone who tastes this pie gets no further than the first bite without demanding to know how to make it, and there are never any leftovers no matter how many I make.

One of my favorite ways to make it is with frozen pink lemonade, which gives it a pretty pastel pink shade and usually generates squeals of delight from my pink loving friends when I unveil it, garnished with a few sparkly sprinkles. It works well with regular frozen lemonade, limeade, orange juice and even frozen fruit punch, and I even had a friend who worked up a fun version with concentrated margarita mix!

As far as crusts go, I usually stick to my Bake or No-Bake Graham Cracker Crust made with graham crackers or saltines, but if you use a store-bought crust it’s even faster to whip up, leaving you more time for the other elements of your feast.

I love that it takes fifteen minutes or less from start to finish to put together even if you make your own crust, then you just let it hang out in the freezer until you’re ready to eat it. It also travels pretty well if you want to take it to a social, and can ride reliably in a cooler without upset if you have a ways to go to get there if you freeze it pretty solid. Even frozen, it has the silky texture you always want in an icebox pie, and requires no topping, meringue baking, or garnish to go from freezer to table. In my house we love it cool and fluffy but not really frozen, so we let it thaw a bit before serving it. It makes for slightly rumpled slices, but who cares when it tastes so good!

  1. Mix frozen lemonade, sweetened condensed milk, and cream cheese together until well blended.
  2. Fold Cool Whip into lemonade mixture until evenly combined.
  3. Pour into pie crust. Place in freezer for at least one hour before serving or until mostly firm. Best served slightly frozen.

Note

Cooled Or Frozen? This recipe works well whether served cool or lightly frozen. (In my house, we like it cool and fluffy, not quite frozen.)

Make Ahead: If you'd like to make it ahead of time, make as directed and then pop it into the freezer uncovered. When solidly frozen, cover with plastic wrap and foil. Will keep in the freezer for up to a month, simply let soften in refrigerator overnight before serving.
